Chilled Carrot Salad

Popular Make-Ahead Salad

This salad is delicious made with fresh, sweet baby carrots from the garden. Carrots are so wonderfully available all year long, that this has become a favorite at my house for summer get-togethers, church pot-lucks, Christmas, and Easter.

The carrots are cooked and then chilled, so even people who have trouble chewing can enjoy this.

Make this a day early, and let it chill in the refrigerator overnight.

Chilled Carrot Salad


2 pounds carrots, sliced large carrots or whole baby carrots
Cook carrots, drain and chill.

2 green sweet peppers, diced

1 large onion, diced

Mix together:
1 can condensed tomato soup (salt free is best)
1/2 cup vinegar, cider or herbed
1/2 cup canola oil
1/3 cup sugar or honey
salt & pepper to taste
Pour dressing over vegetables. Chill at least 4 hours before serving.

  • Use the sweet and sour dressing with other vegetables, too. Experiment!
This salad is a hit at pot-luck suppers and family get-togethers. It's a wonderful, different way to get everyone to eat their carrots!
