Chinese Dishes Easy to Make at Home

Fried Noodles and Vegetables

'½ lbs Chinese noodles

'¼ lb cabbage

'¼ lbs bamboo shoots

'¼ sliced pork

6 large mushrooms

Vegetable oil

Salt and pepper to taste

2 tablespoons sherry

3 tablespoons soy sauce

'¼ shelled shrimp

4 teaspoons cornstarch

1 teaspoon peanut oil

Boil noodles and drain. Cut cabbage, bamboo shoots, mushrooms and pork in slices. Heat oil in frying pan and cook pork, cabbage, bamboo shoots and mushrooms for five minutes. Add salt and pepper. Mix sherry, soy sauce, shrimp and cornstarch. Fry add in mixture.. Remove ingredients. Heat remaining oil and fry drained noodles. Add peanut oil and stir for five minutes. Add all ingredients and heat. Then serve over rice.

Chicken Fried Rice

'½ lbs chicken shredded

2 cups white rice, cooked

6 mushrooms, diced

2 leeks

3 stalks celery, diced

'½ lbs bean sprouts

2 carrots, diced

1 cup bamboo shoots

4 tablespoon oil

2 teaspoon sesame oil

2 tablespoons garlic

1 cup scallions, chopped

2 tablespoon soy sauce

Heat oil and sauté garlic and chicken for two minutes. Add mushrooms, leaks, celery bean sprouts, carrots and bamboo shoots. Cook for three minutes and add rice stirring constantly. Add scallions and soy sauce and mix well. Add salt if needed and serve.

Chicken Chop Suey

4 tablespoon oil

1 stalk celery, diced

1 onion, diced

2 oz bean sprouts

3 tomatoes, skinned and diced

'¼ mushrooms, diced

'½ lbs chicken, diced

1 '½ chicken broth

Salt and pepper to taste

4 teaspoons soy sauce

4 teaspoons cornstarch

5 tablespoons water

Heat oil, add vegetables and sauté for 5 minutes. Mix in chicken, broth, salt and pepper and cook another 5 minutes. Add soy sauce and mix. Blend cornstarch and water and add to mixture. Cook until thick and serve.

Beef Lo Mein

1/2 lb Chinese noodles

1 lbs lean beef, shredded

4 tablespoons oil

4 teaspoons soy sauce

Salt and pepper to taste

1 onion, diced

Frying oil

2 teaspoons garlic

1 cup water

4 teaspoons sherry

1 teaspoon sugar

1 teaspoon soy sauce

4 teaspoons cornstarch

Boil noodles and drain. Marinate beef in oil, soy sauce and pepper for 10 minutes. Saute onion and garlic for 2 minutes and add beef mixture and salt. Mix together water, sherry, sugar, soy sauce and cornstarch Add to mixture and serve when thickened.

Honey Chicken

1, 3-lb whole chicken, diced

1 tablespoon soy sauce

1 large onion, diced

Salt to taste

Frying oil

4 tablespoons honey

4 teaspoon soy sauce

2 tablespoon water

Rub chicken with one tablespoon of soy sauce. Mix together onions and salt and rub inside of chicken. Heat oil in pan and brown the chicken.

Mix together, honey, soy sauce and water and add to fry pan. Bring to boil and cook at low heat for about 2 hours. Add water when necessary.

Pepper Pork

3 tablespoons oil

3 tablespoons soy sauce

1 lbs pork, diced

3 carrots, diced

'¼ lbs peanuts

3 green pepper, diced

2 '½ teaspoons brown sugar

Heat oil and add soy sauce. Add pork and cook for 5 minutes. Add carrots and cook for 3 minutes. Then add peanuts and peppers and cook for 5 minutes. Add brown sugar, mix well and serve.


Sweet and Sour Ribs

2 lbs pork spareribs

1 cup soy sauce

1 cup pineapple juice

'½ cup sherry

2 '½ teaspoons brown sugar

1 tablespoon garlic

Cut pork from bones. Mix soy cause, pineapple juice, sherry, brown sugar and garlic. Marinate pork in mixture for at least 4 hours. Broil about 8 minutes per side.


Crab Balls

1 lbs crabmeat

2 egg whites

Frying oil

2 '½ teaspoons soy sauce

Salt and Pepper to taste

Chop crabmeat and add salt to taste. Beat egg white until stiff and mix with crabmeat. Heat oil and drop crabmeat mixture by teaspoon into oil. When brown remove and drain. Sprinkle with soy sauce and pepper and serve.

Pears with Honey

6 pears

12 teaspoon honey

3 teaspoons cinnamon

12 raisins

Cut stalk off pear and remove center. Fill each pear with 2 teaspoons of honey, '½ teaspoon of cinnamon and 2 raisins. Put top back on and steam for 1 hour.
