You'll need the following ingredients:
1 pound of chicken
Fresh pineapple chunks (or 1 can of Dole pineapple chunks)
1 bottle of sweet and sour sauce (can be found on the International aisle of your supermarket)
1 can of water chestnuts
2 cups of white rice
1 bag of frozen sugar snap peas
1 orange
Instructions for making this Chinese food recipe:
1. Although you can brown your chicken in a frying pan on the range for about 10 minutes or until it's no longer pink, I prefer to make it nice and tender by placing it in a crock pot. Fill the crock pot a quarter of the way high with water and place your chicken in the crock pot. Put it on high for about 3 to 4 hours. Or, if you are going to work all day, put the crock pot on low and let it slowly cook for 7 to 8 hours. Either way, do not remove the lid to check on the status of your Chinese food recipe. Supposedly that takes off 20 minutes of cook time every time you do that. That means you'll have to cook for 20 minutes longer.
2. About a half-an-hour before your chicken will be finished, begin preparing the other ingredients. Start by putting the entire bag of frozen snap peas into a pot of boiling water until they are tender.
3. Cook your rice. I use Minute Rice (don't laugh!) so all I do is simply add 2 cups of water, boil it, take it off the heat, and add the rice. Stir it and then place a lid on it to allow the water absorb.
4. Cut the fresh pineapple into chunks. I'd highly recommend starting with cored pineapple unless you have your own corer. Buying and preparing it otherwise can be difficult and can take quite a while. Of course tossing in a can of pineapple chunks is just as easy too!
5. Drain the sugar snap peas and put aside.
6. Once the chicken is cooked, put it on a plate and use two forks to pull it apart. Shred it very fine or pull it apart in chunks.
7. Place chicken, water chestnuts, sugar snap peas, and pineapple chunks in a saute pan and add the entire bottle of sweet and sour sauce. Heat on low for 3 to 5 minutes, just enough to heat the sauce. Be sure to stir frequently.
Serving suggestions:
Take a long oval serving dish and spread out the white rice, leaving room around the edges of the plate. Place the chicken and the rest of the sweet and sour mixture over the white rice. Cut the orange into thin slices and place them around the edge of this yummy Chinese food recipe. If your plate is bigger and you don't have enough orange slices, cut them in half and arrange them around your plate.
Viola! Your tasty Chinese food recipe is ready! Add Chinese egg rolls, found in the frozen foods department or on the freshly premade made food aisle for local supermarket. Serve with bottled duck sauce.
