January 27th is Chocolate Cake Day! What a delicious day to celebrate! I'm going to have a huge slice of chocolate cake with chocolate frosting and a tall glass of milk. How else would you celebrate, except with a slice of chocolate cake? No, you can't have white or yellow cake with chocolate frosting, it must be completely chocolate! Yummy!

There is no evidence that this is an actual "Day", except for references to it in calendar and Ecard websites, but who cares! Hey, any excuse to celebrate chocolate cake! Here is a bit of chocolate cake history for all the chocolate cake lovers.

The word cake is of Viking origin, from the Old Norse kaka. Chocolate cake was popularized at the end of the 19th century. Conrad Van Houten of the Netherlands developed a mechanical method for extracting the fat from cacao liquor in 1828. The extracting resulted in cacao butter and partly defatted cacao, which could be sold as powder. In 1879, Swiss Rodolphe developed a process for making smoother chocolate, called conching. This made it easier to bake with chocolate. And there was the beginning of the chocolate cake. But until 1890 to 1900, chocolate recipes were mostly for drinks. Devil's food chocolate cake mix was first introduced in the mid 1930's by The Duff Company of Pittsburgh. And the rest is history...

There are many variations of the chocolate cake, such as German Chocolate Cake, Devil's Food Cake, Red Velvet Cake, Sachertorte, Molten Chocolate Cake and Black Forest Cake. And of course, chocolate cakes are popular as birthday cakes, wedding cakes and holiday cakes
