Chocolate Chip Cookie Recipes: Pineapple and Oatmeal Add Change of Pace

When it seems like the old standard chocolate chip cookie is getting dull and boring, here are two chocolate chip cookie recipe variations to try.

Chocolate Chip Pineapple Cookies

Ingredients:

1 cup shortening

2 cups sugar

2 eggs

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon vanilla

1 can of undrained crushed pineapple (use a regular sized can that you can wrap your hand around).

4 cups of sifted flour

1 16-ounce package of chocolate chips

Directions:

Mix shortening, sugar, eggs, salt, baking soda and vanilla in a large mixing bowl. Add the pineapple; mix well. Mix in the flour. Add chocolate chips. Drop by teaspoon on a greased cookie sheet. Bake in a 350 degree oven until the bottoms are lightly browned, about 10-12 minutes.

Many people think of oatmeal cookies as having raisins in them, but few have thought of adding chocolate chips instead.

Chocolate Chip Oatmeal Cookies

Ingredients:

1 ½ cup sugar

1 cup shortening

3 eggs

1 teaspoon cloves

1 teaspoon nutmeg

1 teaspoon cinnamon

1 teaspoon baking soda

1 cup hot water

1 cup milk

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon vanilla

3 cups of quick oatmeal

3 cups of sifted flour

1 16-ounce package of chocolate chips

Directions:

Mix ingredients together. Drop by the teaspoon onto a lightly greased cookie sheet. Bake until the bottoms are lightly browned in a 350 degree oven. For a change of pace, try adding some dried coconut to the dough. Some might consider this addition to make the cookie into more of a candy.
