Chocolate Chip Cookies Recipe: to Good to Be Healthy

Chocolate chip cookies are the classic in comfort food and certainly have a sense of nostalgia. My family recipe is all that and a heaping spoon of healthy. They are puffy and oh so yummy!! Give my classic spin-off a try. You will LOVE them.

Dry Ingredients

1 3/4 cup organic All Purpose flour or King Arthur brand

1/2 cup old fashioned plain quaker rolled oats

1 tspn baking soda

1/2 tspn salt

1/2 cup chopped pecans or walnuts (optional)

1 12oz bag of great quality organic semi-sweet chocolate chips or Ghiradelli brand

Wet Ingredients

1 1/2 sticks of softened butter

1/2 cup white sugar

3/4 cup light brown sugar

2 tspn pure vanilla extract (not essence)

2 egg whites at room temperature

1/4 cup unsweetened applesauce

Method

Preheat the oven to 375 degrees and line 2 cookie sheets with parchment paper - set aside

In a mixing bowl combine all purpose flour, salt and baking soda - set aside

In a food processor place the oats and nuts (optional), pulse the oat mixture until it is as fine as possible

In a stand mixer place the butter, white sugar, brown sugar to cream about five minutes. When the mixture is fluffy and pale yellow, add the egg whites, vanilla and apple sauce. Cream this mixture for another three minutes.

Add the flour into the mixer one cup at a time, lastly add the oat and nut mixture.

Stir in the chocolate chips

Using an ice cream scooper, place scoops onto the parchment lined cookie sheet (approximately 8 scoops per standard cookie sheet). These cookies are puffy and moist.

Bake for 7 minutes and rotate pans, bake for another 5 to 6 minutes.

Cool the cookies on a cooling rack. They can be stored in an airtight container for 2 weeks.
