Chocolate Chip Pancakes

Chocolate chip pancakes are simply delicious, if you like chocolate, that is. And chocolate chip pancakes are very easy to make. If you have a pancake recipe that you already love, just use that recipe and add some chocolate chips to the batter. Below is a super easy chocolate chip pancake recipe that you can make using Jiffy baking mix. Let the pancake making begin!

Chocolate chip pancake recipe:
2 cups Jiffy baking mix
1 cup milk
1 egg
1/2 cup chocolate chips
oil for cooking
butter for flavor

Add the baking mix, the milk and the egg to a medium bowl. Mix with a fork until the egg is well mixed. The batter will be a bit lumpy. Add the chocolate chips and fold them in. If the batter is too thick, you can add a bit more milk. If it's too thin, you can always add a bit more milk. You can also add more or less chocolate chips to your liking.

Heat a griddle or a frying pan on high with a bit of oil. Spread the oil so it covers the bottom of the pan. You can also add a little piece of butter to the pan for flavor. As soon as the pan is hot and the butter is melted, pour on your batter and turn the heat down to medium. Cook until air bubbles start to appear on the top. Then flip the pancake and cook until the batter is cooked through.

Stack your pancakes on a glass dish and keep them covered with foil so they will stay hot until you serve them. If they get cold, remove the foil and cover with plastic wrap and heat the stack in the microwave for about 30 seconds. If you should happen to have some pancakes that are not cooked all the way through, putting them in the microwave for a few seconds will cook them fully.

Serve your chocolate chip pancakes with a scoop of vanilla ice cream and chocolate syrup for an extra special treat. You can also spread a bit of chocolate frosting on the pancakes. Chocolate chip cookies are also good cold. Make them thin and store them in the refrigerator with coffee filters between each pancake so they won't stick together. When the kids need a quick snack, just let them roll up a chocolate chip pancake!

You don't have to eat pancakes just for breakfast. Pancakes make a nice lunch and also a terrific dinner. For lunch, you can serve pancakes with some nice fresh fruit. For dinner, you can serve pancakes on the side with just about any meat, but they go especially good with pork chops or fried chicken.
