Low Fat Bread Recipe - Zucchini Muffins Your Kids Will Eat

Low fat cooking made easy with this yummy chocolate chip zucchini bread recipe. Great bread recipe with zucchini for added nutrition that your kids will eat! This recipe can be modified to make zucchini bread. For an even lower fat cooking recipe, check out my Zucchini Bread Recipe.

Preheat oven to 325°F.

Line muffin pans with muffin papers that have been sprayed lightly with light cooking oil.

Beat:

3 eggs until light and frothy

Mix: ½ cup vegetable oil and ½ cup applesauce (low fat cooking achieved by substituting half of oil with applesauce) - add to beaten eggs.

Stir in:

2 cups grated zucchini

2 tsp vanilla

Combine, then stir in above ingredients:

3 cups flour

3 tsp cinnamon

1 tsp baking soda

¼ tsp baking powder

½ tsp salt

½ cup chopped walnuts (optional)

1 cup mini chocolate chips (for even lower fat - substitute 1/2 cup cocoa powder for 1/2 cup chocolate chips)

Cook 35-40 minutes.

Crumb topping (optional):

¾ cup brown sugar

½ cup flour

3 tbsp butter

2 tsp cinnamon

½ tsp nutmeg

½ cup walnuts (optional)
