Chocolate Pound Cake: Rich and Delicious with a Coffee Flavored Icing

This is a recipe for a delicious chocolate pound cake that was originally developed by my mother, Jewel Acker Lewing. Through the years I have refined and adjusted the recipe to make it lighter and more satisfying for adults. When I was still working, I would make this cake and sell in to my co-workers as a way to supplement my income. I always had plenty of customers, with many individuals purchasing a cake any time I could turn one out.. I hope you will enjoy this pound cake as much as my family and I do.

List of Ingredients for the Cake:

3 sticks butter, at room temperature
3 cups sugar
5 eggs
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3 heaping tablespoons cocoa powder
1 cup milk
1 tablespoon brewed coffee

Method:

Cream together the butter and sugar, beating until light. Add eggs one at a time, beating well after each addition. Sift dry ingredients together and add to the egg mixture a little at a time alternating with the cup of milk. Lastly, beat in the tablespoon of coffee.

Pour into a greased and sugared (just sprinkle the pan liberally with granulated sugar instead of flour) tube pan. Bake at 325 degrees for about an hour and 15 to 20 minutes. The cake should pull away slightly from the sides of the pan.

Ice cake while still warm.

List of Ingredients for the Icing:

2/3 stick of butter, room temperature
2/3 pound of powdered sugar, sifted
1 heaping tablespoon cocoa powder
1 teaspoon vanilla
3 tablespoons hot brewed coffee

Method:

Cream together the butter and sugar. Add the cocoa powder, then the coffee and vanilla. Beat until well mixed a a bit glossy. Ice the still warm cake.

This cake is a winner at covered dish suppers, to bring to funerals, or just to serve for Sunday dinner. Really delicious and moist.

    How did I miss this the first time around? Glad I found it now! Yum! Even people who don't drink coffee will love the frosting. You can't taste the coffee (from other coffee frosting recipes I have), but it adds a rich flavor to it. :-)

    I DID make this today and it is every bit as delicious as it looks on the page (ingredients etc). It was worth shopping at 4 am to get the ingredients. We are going to have some very happy partygoers at our party today (I made a small bit of this in a separate pan so I could eat some ahead of time).
