Choosing a Thanksgiving Turkey Size

Thanksgiving is a day for giving thanks, and a day for stuffing yourself with turkey and a tasty variety of side dishes. If you are hosting Thanksgiving dinner this year, make sure you have enough turkey to go around. Guidelines for the amount you should prepare for each person range from one (Betty Crocker) to one-and-a-half (Martha Stewart) pounds. To estimate the total amount you need, simply multiply the number of guests times the recommended amount.

For example, let us say you are hosting dinner for 15 people, Therefore, 15 people times one pound per person equals a 15 pound turkey. If you use the one-and-a-half pound per person recommendation, the size of the turkey increases to 22.5 pounds. Be sure to round up to 23 pounds. Base your estimate on the number of side dishes you plan to have at the dinner; the more sides, the smaller your turkey can be. You might also want to consider whether or not you want to have leftovers around after the holiday. If you do, go with a bigger turkey.

Cooking time will vary depending on the size of turkey you purchase. Simply put, the larger your turkey, the longer you will need to cook it. Some turkeys are sold with thermometers in them that pop out when done. You should use a meat thermometer to ensure that your bird is heated to the USDA recommended 165 degrees Fahrenheit. Check the temperature in the wing and in the thickest part of the breast. It is essential that you properly thaw your turkey before cooking, and to preheat your oven if you want to reduce cooking time.

One last consideration with regard to turkey size is the size of your oven. Before purchasing a turkey, make sure your oven or cooking device can handle whatever size you choose. Most conventional ovens can handle 20 plus pound turkeys without any problem. You may need to adjust the position of the racks or remove one to accommodate your bird.
