This is an easy-to-make appetizer which is an ideal finger food or canape for the festive season. These baby peppers are approximately 2.5 inches long, very sweet and tender and make an addition to any Christmas buffet or pre-dinner snack.
You will need:
Sweet Baby Peppers (1-2 peppers per guest)
200g Greek Feta Cheese
½ cup Mayonnaise
Bunch of spring onions
Dried oregano
Extra Virgin Olive Oil
Green Olives
Cut the peppers in half, brush them lightly with olive oil and place on a baking tray for 5-8 minutes under a medium grill. Meanwhile, crumble the feta cheese with your fingers in a bowl; add mayo, finely-cut spring onions, a dash of olive oil and a good pinch of oregano. Mix well. Remove the peppers from the grill, fill with the mix and garnish with green olives.
