Christmas Breakfast at Our House

Christmas mornings at our house can be hectic. Santa has brought lots of surprises during the night and we have three grandchildren who get up early to see all the goodies they have recieved. My husband and I are lucky that all our children come They have other family and friends that they visit on Christmas Eve. Then they all come here for our family tradition of my dad reading "T'was the Night Before Chritmas". Then time for the kids to go to sleep.

Our Christmas morning begins with the kids waking us all up between 5 and 6. With all the fun going on, who wants to spend time fixing breakfast? Not me that's for sure. It is one of those times when you wish you could fix something the night before and have it ready to eat when you want it. That is why this eggs casserole works so well. Other than being delicious, it can all be prepared the night before and baked the next morning.

Eggs Casserole - serves 10

Ingredients

9 eggs
9 slices of bread - cubed or torn into pieces
1 1/2 teaspoon of salt
1 1/2 teaspoon of dry mustard
1 1/2 cup grated cheddar cheese
3 cups skim milk
1 cup ham
1 pound sausage

Brown meat and let cool. Beat eggs until frothy, add milk, salt, mustard and cheese. Mix well. Add meat and bread cubes. Place in a greased 8 1/2 x 13 inch dish. Refrigerate overnight. Take out 1/2 hour before baking. Bake at 350 degrees for 45 minutes.

Another Christmas breakfast favorite for us is muffins and tropical fruit. You can substitute the muffins with coffee cake, donuts, whatever your family likes. I buy cans of tropical fruit and pour into a medium size bowl, then stir in 1 small package of vanilla pudding mix. This can be made the night before and refridgerated or made that morning. I like this because it can be sit on my kitchen table and eaten whenever someone is hungry.

We have our Christmas dinner early in the afternoon, so breakfast is a casual meal.
