Christmas Calamari with Red & Green Tortellini

Deliciously seasoned tender calamari rings with festive red and green cheese tortellini, ready in less than 30 minutes. Ideal for Christmas Eve dinner, holiday parties, brunches or buffets.

Ingredients

Serves 8
2 lbs calamari rings - frozen (thawed) or fresh
1 lb red tortellini - frozen or fresh
1 lb green tortellini - frozen or fresh
6 scallions - chopped
3 cups plumb tomatoes - diced
2 cups mushrooms - sliced
12 garlic cloves - sliced
3 tbsp basil - dried
3 tbsp oregano - dried
3 tbsp parsley flakes - dried
2 tbsp onion powder
3 tbsp garlic powder
2 tbsp black pepper
2 tsp salt
1 cup olive oil
1 cup white wine (pinot grigio or other dry white wine )

Directions for Christmas Calamari with Red & Green Tortellini

Cook Red and Green Tortellini in Boiling Water
Add 4 tablespoons off olive oil and 1 teaspoon of salt to a large 4 qt or larger pot. Bring water to a boil, add red and green tortellini, reduce heat to medium and cook until tender. When tortellini is done, cover and set aside.

Saute Garlic, Scallions and Mushrooms
Saute in 3 tablespoons of olive oil until garlic is light golden brown. Add scallions and mushrooms and tomatoes and saute until mushroom slices turn a golden brown.

Add White Wine, Olive Oil and Dry Seasonings and Calamari
Add basil, oregano, parsley, garlic powder, onion powder, black pepper, white wine and calamari. Mix well.

Cover and Simmer for About 15 minutes
Cover and simmer over medium heat for about 15 minutes or until calamari is tender. Don't overcook or calamari will become tough and rubbery.

Combine Tortellini and Calamari Mixture
Drain the tortellini and add the calamari mixture with all the liquid. Add remaining olive oil. Mix well and serve.
Tip
Don't over cook calamari or it will become tough and rubbery. If you're using any frozen ingredients ... like the calamari or tortellini make sure it's defrosted at room temperature before using it.
