Being busy is a given for everyone, but it becomes heightened during the holidays. Christmas is right on the heels of Thanksgiving which adds pressure and creates even more anxiety. I would like to share a couple of super fast and delicious Christmas candy recipes that are not only wonderful to enjoy but they also make a wonderful gift.

Be sure and make extra because everyone who has some will be coming back for more.

Matzo Cracker Toffee is a quick Christmas candy that soon became a tradition in our family.

You will need Matzo flat crackers, 1 cup of brown sugar, and 1 stick of butter, chocolate chips, and nuts. The great thing about this recipe is that it is adaptable to your personal tastes. If you prefer to use dark chocolate and pecans you can or maybe you like milk chocolate and chopped walnuts. Feel free to use the combination you and your family will enjoy. Also if you do not have matzo crackers on hand but you do have a box of saltines you can substitute the crackers to.

Preheat oven to 375 degrees.

Take a large cookie sheet and line it with foil. Then cover the foil with the crackers. Melt butter on a low flame and mix in the brown sugar. When mixed well, pour over the crackers. Then sprinkle the chocolate pieces heavily over the brown sugar and butter. The chips will melt quickly and then over that sprinkle the nuts.

Place in oven for about 15 minutes. Remove and let cool.

These make wonderful Christmas candy gifts to share with neighbors or send away as gifts.

Line a decorative box or basket with Christmas colored napkins or tissue paper, fill with cooled Christmas toffee and tie with a ribbon.

Christmas Candy Chips is also another quick and easy fun to make candy.

You will need a bag of potato chips such as ruffles and chocolate chips and Christmas colored sprinkles.

Fill a microwavable bowl with chocolate chips and melt for a couple of minutes. Meanwhile line a cookie sheet with foil and fill with the potato chips. When the chocolate chips have melted, drizzle over the chips. Flip chips over with a rubber spatula and drizzle again. Then add the Christmas sprinkles.

These Christmas Candies are so fun and yummy. Best of all they can be made fast!
