Ingredients

1 1/2 cups graham cracker crumbs
5 tablespoons melted butter or margarine
1/4 cup water
.25 ounce unflavored gelatin (envelope)
1/4 cup milk
1/4 cup confectioner's sugar
8 ounces soft cream cheese
12 ounces frozen whipped topping, thawed
21 ounces cherry pie filling or strawberry pie filling

Directions for Christmas Cheesecake

Combine graham cracker crumbs and butter, then press into bottom of greased 9 inch pan (springform works best). Chill in fridge for 1/2 hour. In a saucepan, combine water and gelatin. Add milk and stir over low heat until the gelatin is completely dissolved. Mix together sugar and cream cheese. Mixture is done when light and fluffy. Add gelatin mixture and stir. Chill for 15 minutes or until partially set. Then fold in 2 cups of the whipped topping and pour into crust. Chill 3 hours or until firm.

Spread pie filling on top. Add remaining whip cream on top of pie filling.
Tip
Add a handful of crushed walnuts to graham cracker crumb and butter mixture for a different taste. Or you can use a store-bought chocolate graham cracker crust which tastes great with this recipe.
