1 cup softened butter
1 1/4 cup packed light brown sugar
1/4 cup sugar substitute
1/4 cup granulated sugar
2 eggs
2 1/2 tablespoons vanilla extract or pure vanilla
1 3/4 cup all purpose flour
1 teaspoon baking soda
dash salt
2 1/2 cups oats
2 cups chocolate chips
1 cup chopped walnuts

Preheat to the oven to 375 degrees.

In a large bowl, mix the butter, eggs, and vanilla until light and fluffy. Mix the remaining ingredients except for the flour. Slowly add the dry ingredients to the wet ingredients, mixing everything together.

Incorporate the oats into the other ingredients. I aim for 2 ½ cups of oatmeal, but typically use a little less. Use less oats if you want a smoother cookie and more oats for a thicker texture, similar to traditional oatmeal cookies.

Place rounded spoonfuls of the cookie dough on a cookie sheet. Bake the cookies for up to 12 minutes, checking the oven after nine minutes. The cookies should feel slightly firm to the touch and have a golden brown top. If you like a crunchier cookie, leave the cookies in the oven longer. Carefully transfer the cookies to a cooling rack.
