Christmas Dessert Recipes Anyone Can Make

Cakes, Log and Puffs Are Great Dessert Treats

Robin Vinci
Although I love Christmas cookies, sometimes the occasion calls for another type of dessert. Here are a few recipes that help make the holiday or a holiday party special.

Wreath Cake

2 layer cake mix (flavor of your choice)

2 cups white whipped icing, cooked

30 spearmint leaves

22 cinnamon hearts

3 red licorice sticks

Cook and let cake cool. Dab bottom of cake plate with whipped icing to keep the cake secure. Ice the entire cake. Decorate the cake with spearmint leaves and cinnamon hearts to look like holly. Braid the licorice to look like a ribbon and put on bottom area of cake. This is actually quite easy, but looks really nice.

Christmas Tree Cake

2 layer cake mix (flavor of your choice)

3 cups green icing, or white with green food coloring

½ cup white icing

½ cup yellow icing

¼ cup brown icing

Red, green and yellow M&Ms

Cook cake and let cool. Freeze the cake. Once frozen cut it to look like a Christmas tree. Also make a star on top with access cake that was cut. Adhere all piece with a dab of icing. Use green icing and coat the base of the tree. Use brown icing for base of tree and yellow for the star. Use white icing to make garland. You may want to use a parchment cone. Put M&M's around brown iced base and on garland. Decorate tree with Merry Christmas cookie decals, tiny candy canes or whatever cool stuff you can find.

Christmas Tree Crème Puffs

1 ¼ cup water

2/3 cup butter

1 cup flour

5 eggs

3 cups chilled whip cream

¼ cup crème de menthe

½ cup melted chocolate

Heat water and butter in saucepan and stir in flour. Remove from heat and add eggs. Beat until smooth. Drop by teaspoon on ungreased baking sheet and cook at 400 degrees Fahrenheit for 25 minutes. Let cool.

In bowl beat whipping crème and then add crème de menthe. Cut slit in puff and insert whipped mixture with decorator tube. Refrigerate until ready to use. Dip bottom of each piece in melted chocolate and pile up on plate to look like a Christmas tree triangle. Then drizzle remainder of chocolate to look like garland. These are so scrumptious.

Nutmeg Log

3 cups of flour, sifted

1 teaspoon nutmeg

¾ cup sugar

1 egg

Icing

Mix sugar and egg. Add flour and nutmeg. Shape into long rolls and cut into 2 or 3" lengths. Place on ungreased pan and cook at 350 degrees Fahrenheit for about 13 minutes. Cool and then frost. Sprinkle with additional nutmeg. A great holiday treat that everyone seems to enjoy.

Lemon Snaps

(These are not necessarily Christmas oriented but I make them during the holiday season and everyone loves them)

1 box lemon cake mix

2 cups cool whip

1 egg

Powdered sugar

Combine cake mix, cool whip and egg. Mix well and drop by teaspoon onto powdered sugar. Bake at 350 degrees Fahrenheit for 10 minutes. Cool and keep either in container or freeze and remove as needed. These are easy to grab snacks.
