My favorite Christmas Dinner is Grandma Klausz's Hungarian Chicken Noodle Soup. It is loaded with memories as well as some great healing ingredients. Y'all can read about a few memories in my Christmas Memories @ http://www.associatedcontent.com/article/1269918/christmas_memories.html?cat=7

Grandma would arise early Christmas morning and butcher an old laying hen. Today we use either a roasting chicken or a whole bag of legs and thighs. If you don't try this for Christmas dinner try it soon just because it's a great soup. Freeze some for the next time the "flu bug" visits your family. It's better than penicilin... Better for you too. Roll up your sleeves, take off your rings, wash your hands and let's get cooking.

Grandma Klausz's Hungarian Chicken Noodle Soup

Ingredients:

9-10 pound roasting chicken

2 softball size sweet onions diced

1 whole head celery washed and diced (Leaves too)

1 pound carrots washed & diced

1 pound parsnips washed & diced

1 pound turnips washed & diced

1 pound red potatoes washed and diced

1 pound Parsley Root peeled and diced

½ small head of cabbage diced

Chateau de Spigot (aka Water)

1 Tablespoon Hungarian Sweet Paprika

1 Tablespoon Nutmeg

1 teaspoon Sea Salt

1 teaspoon Black Pepper

1 Pound egg noodles (Homemade are best but the frozen ones will work)

Directions:

In a large kettle place chicken and Chateau de Spigot enough to cover. Bring to a boil and lower heat to a simmer. 3-4 hours. Remove chicken from now broth discard bones and skin, dice meat and return to pot. Add all vegetables and spices and return to a boil. (You may need to add more Chateau de Spigot) Once you have a full rolling boil lower heat again to simmer till vegetables are fork tender. Taste and adjust seasoning if needed. Return to a boil for the last time and add noodles. 20 min later you are finished cooking.

Note:

Grandma would serve other meat, salads, and Aunt Kate would bring some great pies, Aunt Theresa would bring 100s of different kinds of German Christmas cookies, Grandpa would get that twinkle in his eye as he "Found" some ice cream in the freezer, Uncle Sam would bring some Homemade Wine. Grandma also would bake homemade bread, butter, and homemade apple butter, to enhance this meal beyond your imagination.
