Lorraine's Spinach Casserole

Tired of that cliché'd Green Bean Casserole your sister-in-law brings every year? Try Spinach Casserole instead! My friend Lorraine gave me this recipe after I watched grown men at an affair we attended scarf it up like chocolate. It is simple to make, and surprisingly tasty. I guarantee you won't have much left to put away!

Spinach Casserole

Ingredients:
1 Box Chopped Spinach
1 Can Cream of Mushroom or Cream of Celery Soup
¼ cup butter
1 tbsp. grated onion
¾ cup shredded cheddar cheese
1 egg
1 cup stuffing cubes

Thaw and drain spinach. Grease casserole dish.
Preheat oven to 350°.

Mix soup, butter, onion and egg. Add spinach, cheese and bread cubes (reserving ¼ cup for topping). Pour into casserole, top with reserved bread cubes, dot with butter.

Bake at 350° for 30 minutes. Serves 6.

    One would need more than one box of spinach to counteract the artery clogging effects of the butter and cheese. It does sound tasty though.
