Christmas Eve usually brings some families together for dinner. Desserts are easy, but the main course seems limitless. You know you don't want Turkey or Ham, so what else can you have that would really be great?

Beef Pot Roast - Make a Beef Pot Roast in your Crock Pot.

You will need:

3 or 4 LB Boneless Beef Roast (size depends on your crock pot and number of guests)

1 sliced onion

1 teaspoon of salt

½ teaspoon of pepper

½ cup of water

Directions:

Put the sliced onions in the bottom of your crock pot. Then add salt and pepper to the roast. Put the roast in the pot. Now, add your water and cover. You will cook this on Low for 10 to 12 hours, or until done. If you're in a time crunch, you can cook it on High, it will only take 5 or 6 hours.

Scalloped Potatoes

You will Need:

4 cups of sliced potatoes

Slices of onion (suit to your taste)

1 can of cheddar cheese soup

½ cup of milk

1 teaspoon of pepper

1 tablespoon of butter

1 teaspoon paprika

Directions:

Mix the soup, milk, and pepper together. Spread the potatoes around in your casserole dish, then add the onions and the sauce you just made. Add the paprika evenly across the top. Finally, pour the melted margarine onto all this. Bake at 375 for about an hour or until done.

Macaroni and Cheese

You will need:

1 ½ cups of macaroni

3 tablespoons of melted butter

2 cups of milk

1 package of Sharp Cheese

1 package of Cheddar Cheese

Salt & Pepper to taste

Directions:

Prepare the macaroni as usual and drain. Pour the macaroni back into the pan. Then combine the melted butter, milk, and stir in the cheeses (you don't have to use the entire packages). If you would like a macaroni "casserole," pour the macaroni into a casserole dish and cover it with any remaining cheese. Place in the oven and bake at 350 for a few minutes.
