Christmas Eve Dinner Ideas: You Don't Have to Cook

For those of us who prepare a big meal for Christmas day, feeding our families the night before becomes a burden. Here are a few ideas to maintain a sense of festivity but keep you from going over the edge.

Idea #1 - Creamy Grits

As a southerner, I like nothing better than smooth, creamy grits on a cold winter night. They are easy to prepare and a cinch to dress up.

Prepare quick cooking grits (I prefer yellow) according to package directions. You will need to be mindful of the cooking temperature since smooth, creamy grits require a slower, longer cooking time. For the most part, you want to keep the heat on low to medium low and stir grits every few minutes. For this recipe, I usually cook about 30 minutes over low heat.

During the last 5 minutes of cooking time, stir in about a 1/2 cup shredded sharp cheddar cheese until melted. To season, add a pinch of garlic powder and salt and pepper to taste.

Serve with country cured ham or pepper bacon and your favorite pre-made frozen biscuits.

Idea #2 - Homemade Vegetable Soup

Who doesn't love homemade soup? But some recipes take a lot of time and preparation. This vegetable soup recipe offers some shortcuts, but no one will ever know the difference.

Ingredients:

*2 packages frozen soup vegetables

* 2 regular sized cans diced tomatoes

* 2 regular sized cans diced tomatoes, Italian flavored

* Optional: If there's a particular vegetable that you like more of, feel free to add a bit more. For example, I like a little more corn, so I add a small can of whole kernel corn. If okra is your thing, add 1/2 small package of frozen okra. You get the idea.

Combine above ingredients in large pot and bring to a boil over medium heat. Reduce heat to low simmer. About 30 minutes into cooking, add seasonings to taste: chili powder, salt, celery salt, Italian seasoning. Add 2 bay leaves.

You can simmer this soup all day long and it is even good after being refrigerated and reheated 3 to 5 days later.

Serve with cornbread made from a prepared mix. For example, most grocery stores carry a Mexican Cornbread Mix that has some hints for additions, such as a can of creamed corn. The cornbread is delicious with the soup and a quick way to complete your meal.
