Christmas Eve Fingerfood Recipes: Beefy Bean Dip

Most families who have a Christmas Eve party have a buffet spread rather than a formal sit-down dinner. The buffet at my house on Christmas Eve offered a wide variety of foods from cheese and veggie trays to dips and sweets. Every year the spread would change just a little, but there were always though items that I just couldn't go without on Christmas Eve night. Many people gather recipes from work potlucks or use family recipes that generations before them have used. I want to offer a new source for those Christmas buffet recipes, me.

Here is one of my family's most popular finger food dishes:

Beefy Bean Dip:
This dish is probably the most popular passing dish that my family makes. Whenever we take this to a party everyone wants the recipe. It is great for Christmas parties as well as for dinner any night of the week.

1 LB. Ground Beef
1 Can Cream of Chicken Soup
1 Can Cream of Celery Soup
2 Cans Hormel Hot Chilli with Beans
1 Jar Medium Picante Sauce
12 oz. Package of Monterey Jack Cheese with Jalepenos
12 oz. Package of Monterey Jack Cheese

Brown the ground beef and drain it well.
Put the beef and the rest of the ingredients into a Crockpot.
Cook on low, stirring occasionally, until all the cheese is melted. (Cutting the cheese into small pieces helps it to melt faster.)

If you are going to try any of the recipes I offer up in this series on great recipes to try this Christmas, try this one. If you like dips, you like anything cheesy and/or spicy, this dip will be a hit. This is also the easiest recipes since all you basically have to do is brown ground beef and then let everything sit in the Crockpot. Also, if you do make everything in a Crockpot, you'll be able to easily store the leftovers by pulling out the ceramic dish and putting it right into the fridge.
