Two Holiday Sweets

Christmas Fruit Loaf

4 cups flour

1 teaspoon baking powder

½ teaspoon cloves

½ teaspoon cinnamon

1 lbs butter

1 lbs brown sugar

10 eggs

½ lbs candied cherries

½ lbs candied pineapple

1 lbs dates, seeded

1 lbs raisins

1 lbs currants

½ lbs citron

½ lbs candied orange and lemon peel

½ nuts

1 cup honey

1 cup molasses

½ cup cider

Sift and then mix flour, baking powder and spices. Cream butter. Add sugar and cream and mix until fluffy. Add eggs, fruit (chopped), peel, nuts, honey, molasses and cider.

Add flour mixture gradually beating until blended well.

Put into loaf pan (makes 3 pans) that have been greased well and lined.

Bake at 250 degree Fahrenheit for 4 hours.

Cherry Chocolate Candy

½ cup mini marshamallows

8 oz semi-sweet chocolate

½ cup flaked coconut

6 candied red cherries or maraschino cherries

Line bottom of loaf pan with wax paper. Arrange marshmallows in bottom of pan.

Heat chocolate over water until melted. Remove from heat and stir. Pour over marshmallows distributing it evenly. Tap pan to make it settle properly. Put in cherries and sprinkle coconut (you could color it red or green it desired). Let stand a few hours to harden. Cut into squares.
