Sam Skipper
Chocolate fudge is a favorite candy that can be served at any time of the year, but is especially nice during the holidays. Here is a selection of Christmas fudge recipes to serve for holiday pot lucks, family dinners, and Christmas brunch treats.

Easy Holiday Fudge

This easy recipe uses dry nonfat milk and unsweetened chocolate for its richness.

1 lb. powdered sugar
1/3 cup dry nonfat milk
1/4 cup butter or margarine
3 squares unsweetened chocolate
1/2 cup light corn syrup
1 Tbsp hot water
1 1/2 tsp vanilla extract
1/2 cup chopped almonds, lightly toasted

Prepare an 8 or 9 inch square pan by oiling it well, making sure corners and sides are oiled.

Sift the dry nonfat milk and powdered sugar to remove all lumps and set aside.

In the top of a double boiler, melt the butter with the unsweetened chocolate. Add in the corn syrup, the warm water and the vanilla extract. Stir well.

Add in the reserved milk and sugar mixture, in three parts, stirring after each addition until smooth. Add in the chopped pecans.

Transfer the mixture into the reserved oiled baking dish and press to get all corners. Place in refrigerator and cool until the fudge is thickened. Cut into squares or diamonds before serving.

Easy Cooked Holiday Fudge

This recipe is a cooked version, but doesn't require a cooking thermometer to cook the fudge.

2/3 cup whole milk evaporated milk
1 2/3 cup granulated sugar
1 1/2 cups semi sweet chocolate chips
1 1/2 cups marshmallows
1/2 cup chopped walnuts
1 tsp vanilla extract

Prepare an 8 or 9 inch square pan by oiling it well, making sure corners and sides are oiled.

In a heavy bottomed sauce pan, add in the evaporated whole milk and granulated sugar. Cook over medium high heat until boiling, then continue to boil for 5 minutes (set timer). Stir the mixture constantly and adjust the temperature of the heat to ensure the mixture doesn't boil over.

Remove the pan from the heat and add in the chocolate chips, marshmallows and chopped nuts. Stir in the vanilla extract. Mix all the ingredients until they are smooth and all the chocolate chips and the marshmallows have all been melted.

Transfer the mixture into the reserved oiled baking dish, pressing to get all the corners. Place in the refrigerator and cool until the fudge is thickened. Cut into squares or diamonds before serving.
