Christmas Party Appetizers: Pork Meatball Skewers with Pineapple Sauce

Pork Meatball skewers with Pineapple Sauce

Ingredients:

2 Lb --- Ground pork

1 pc --- Onion (small dice)

2 cloves --- Garlic (minced)

1 Tsp --- Black pepper (ground)

1 Tsp --- Salt

1 Tsp --- Thyme (dried)

1 Tsp --- Oregano (dried)

1/4 pcs --- Pineapple (cut in small 1 inch triangles)

150 ml --- Pineapple Juice

25 ml --- White Wine Vinegar

1 Tsp --- Cornstarch

1/3 cup --- Vegetable oil

Method:

Meatballs

1) In a bowl mix the ground pork, onions, garlic, black pepper, salt, thyme and oregano.

2) Make 2 oz balls from the mixture (an ice-cream scoop might help) (if they stick to your hands use some cold water), and line them up on a plate (to prevent sticking to each other dust them with some flour)

3) Heat up a frying pan and add the vegetable oil.

4) Put the meatballs in the frying pan and cook them 2 minutes on each side until they have a golden brown color.

5) Take them out and put them on a paper towel to absorb the excess fat.

Pineapple sauce

1) Heat up a frying pan (non-stick pan helps), put 1Tbsp of vegetable oil and then add the pineapple triangles. Cook them until caramelized on each side (on high heat)

2) Add the pineapple juice and the white wine vinegar, and cook it down for 5 minutes.

3) Mix the cornstarch with 2 Tbsp of cold water and mix it in the sauce when is boiling.

Serving:

On some bamboo skewers put 3 pcs of pineapple and 2 meatballs. Arrange them on a plate and drizzle the sauce on top. You can chop some cilantro and sprinkle on top of the skewers.
