Christmas Pudding A Great Treat on the Holiday

If you have never made a Christmas Pudding, this is the recipe you are looking for. It's a true fruit and nut holiday classic.

Ingredients:

2 1/2 cups sifted flour

3 teaspoons baking powder

1 tablespoon pumpkin pie spice

½ teaspoon salt

½ cup shortening

¾ cup brown sugar

2 eggs

1 teaspoon vanilla

¾ cup milk

4 oz jar chopped mixed candied fruit

½ cup chopped walnuts

Brandy or Brandy Sauce

Dried Cherries

Sift flour, baking powder, pumpkin pie spice and salt. Cream hortening and brown sugar Beat in eggs and vanilla.

Sift in dry ingredients. Add milk and beat. Fold in candied fruit and walnuts.

Pour into greased mold. Cover with foil tightly. Use string if needed.

Pour in boiling water covering half of the pudding mold. Cover tightly.

Steam 2 ½ hours. Cool mold for five minutes. Loosen pudding around edges. Unmold and put on serving plate.

Before serving brush on brandy or brandy sauce. Decorate with cherries. Cook about 24 hours in advance. You can reheat for 15 minutes at 350 degrees Fahrenheit.
