Christmas Pumpkin Rolls: Easy Appetizers for a Christmas Party

Christmas Pumpkin Rolls: Easy Appetizers for a Christmas Party - A great holiday appetizer treat for the entire family to enjoy!

Makes 10-12 servings

Cake:

3 eggs

1 c. sugar

2/3 c. canned pumpkin

1 tsp. lemon juice

¾ c. flour

1 tsp. baking powder

2 tsp. cinnamon

1 tsp. ginger

½ tsp. nutmeg

½ tsp. salt

½ c. chopped nuts (optional)

Filling:

1 pkg. (8 oz.) cream cheese

¼ c. butter or margarine

½ tsp. vanilla

1 c. confectioner's sugar

Directions:

1. Preheat oven to 375°F.

2. Beat eggs on high speed for at least 3-5 minutes and then

gradually beat in sugar.

3. Stir in pumpkin and lemon juice.

4. Sift together dry ingredients and fold into pumpkin mixture.

5. Line with parchment paper and generously grease a 15x10x1" jelly

roll pan and sprinkle nuts evenly over the top.

6. Bake at 375°F for 12-15 minutes.

7. While the cake is baking, prepare the filling.

• Cream together the butter and cream cheese.

• Add the vanilla and mix in.

• Slowly add in the powdered sugar.

• Beat together until smooth and creamy.

8. Turn slightly cooled cake onto a tea towel that's been sprinkled

with powdered sugar.

9. Starting at the narrow end, roll towel and cake up together. Cool in refrigerator.

10. Unroll cake and spread cake filling on the top.

11. Roll up cake roll without towel, wrap in plastic wrap or waxed

paper and chill in the refrigerator. Slice and serve.

*This is a great dessert that can be prepared in advance, frozen, and then thawed in the refrigerator and served.*
