Christmas Rye Cookies

This delicious cookie is based on a traditional Scandinavian cookie. The rye flour pairs well with the cardamom and gives them a distinctive flavor. Although they tend to be considered a Christmas cookie they really are delicious anytime. Rye and oat flour are both available at many larger grocery stores or specialty stores such as Whole Foods or Wegmans.

½ C. butter
¼ C. cane juice sugar
½ C. rye flour
1 C. oat flour
½ t. cardamom powder
1/8 t. baking powder
¼ t. salt
3 T. water

cream together butter and sugar until light and fluffy
add oat flour, baking powder, cardamom and salt
mix well
add enough water to moisten dough
roll out onto floured board
use cookie cutters to shape as desired
bake on ungreased cookie sheet 375°F 8-10 minutes until slightly brown
cool 2 minutes on cookie sheet
