Custard
3 egg yolks
2 tablespoons of sugar
1 tablespoon cornflour
1 1/2 cup s milk
1/2 teaspoon of vanilla essence
Whisk the egg yolks, sugar and cornflour together in a bowl. Bring the milk almost to a boil in a saucepan. Pour the milk over the egg mixture. Stir well then pour it back into the saucepan and bring it back to a boil. Add the vanilla essence. Pour the custard into a bowl and let cool.
3/4 cup brandy or sherry
200 g dried fruit -chopped
500 g christmas cake -crumbled
60 g (2 oz) of glace ginger - finely chopped
1 cup/8 oz of cream
glace fruit to decorate
Combine 1/2 cup brandy/sherry with the fruit in a small pan and stir over medium heat for 5 minutes.
Remove once the fruit is plump
Put the cake in a large serving bowl and sprinkle with brandy (the remainder) Add the fruit and ginger and stir well.
Cover and refrigerate until cold
Pour the custard over the cake and fruit. Cover and chill until ready to serve.
Lightly whip the cream then spoon on top of the custard layer.
