Chunky Guacamole

This is a great guacamole that gives you a chance to get extra veggies into your kids diet.

Ingredients

Serves 8
2 medium roma tomatoes, seeded and finely chopped
1/4 small red onion, finely chopped
2 tbsp lime juice
1 tbsp olive oil
1/4 tsp salt
1/8 tsp black pepper
1 or 2 garlic, minced
2 ripe avocados, halved, seeded, peeled and coarsely mashed
to serve Tortilla chips

Directions for Chunky Guacamole

In a bowl, combine tomato, red onion, lime juice, olive oil, salt, pepper, and garlic. Gently stir in avocados. Cover the surface with plastic wrap. Chill for up to 1 hour. Serve with tortilla chips.
Tip
For a little spice, add one seeded, finely chopped jalapeno pepper.
