Cilantro Chutney Recipe

Rebecca Livermore
Cilantro chutney is an excellent way to add some variety to a meal. It goes great with Indian food such as pakoras, but can also be used as a healthy dressing for a salad, a topping for pasta, or a spread for a sandwich.

Ingredients

Serves 8
1 small Coarsely chopped onion
1 Coarsely chopped jalapeno
2 tsp Sugar
1 1/2 tsp Ground cumin
1 1/2 tsp Salt
1/4 - 1/3 cup Lime juice
1/4 cup Olive oil
2 cups Cilantro
3 cloves Garlic

Directions for Cilantro Chutney Recipe

1
Cut off and discard the stems from the cilantro.
2
Coarsely chop the cilantro.
3
Peel three cloves of garlic.
4
Coarsely chop one onion.
5
Cut a jalapeno into eight parts (more or less). Jalapenos get their heat from the veins and the seeds, so unless you like it really hot, remove most of the seeds and veins.
6
Measure out your spices -- 2 teaspoons sugar, 1 1/2 teaspoons ground cumin and 1 1/2 teaspoons salt.
7
Squeeze the juice from limes or use the lime juice you get in a bottle at the grocery store. You'll need 1/4 to 1/3 of a cup of lime juice.
8
Place all of the above ingredients, along with the olive oil into a blender and blend until smooth.
Tip
If you don't like food too spicy, discard all or part of the jalapeno seeds.
