Mexican Salad Appetizers and Main Dishes

Want a salad with some spice? Mexican salads are great for Cinco de Mayo or anytime you want Mexican fare. Some are appetizers and some can be side or main meals. Here are a few recipes to please your pallet.

Taco Salad

2 lbs ground beef

1 cup diced onion

1 cup diced bell pepper

3 teaspoons garlic

1 cup celery, diced

Dash salt

1 teaspoon chili powder

1 head lettuce, chopped

2 large cans diced tomatoes

4 oz corn chips

10 oz can tomatoes and green chilies

16 oz shredded cheese (Mexican mix is best)

Brown beef and set aside. Stir-fry onion, celery, pepper and garlic. Add meat and simmer 20 minutes. Toss lettuce tomatoes and crunched corn chips. Mix caned tomatoes, chilies and cheese to meat mixture. When cheese is melted, pour it over lettuce mixture and serve. This is great for 6 people as a meal or an appetizer.

Mexican Salad

8 chilies, peeled and seeded

2 tomatoes, peeled and sliced

10 lettuce leaves

2 onions, diced

3 tablespoon vegetable oil

1 tablespoon vinegar

2 teaspoon sugar

Dash salt

Put chilies and tomatoes over lettuce. Top with onions. Mix together the rest of the ingredients and pour over chilies. Chill and serve. This is a great meal or side dish.

Abalone Salad

16 oz chopped abalone or clams if you prefer

1 onion

8 oz green chilies, can drained

3 tablespoons olive oil

2 tomatoes diced

1 teaspoon vinegar

1 tablespoon lime juice

2 teaspoon garlic minced

Dash salt & pepper

Mix ingredients together and refrigerate. Serve with crackers. I use this as an appetizer.

Mexican Tuna Salad

1 head lettuce

2 large tomatoes, cubed

½ cup onions

½ cup olives 1 cup shredded cheddar cheese or Mexican blend

1 can tuna, drained

1 cup corn chips

Dressing

1/2 cup mashed avocado

½ cup sour cream

1/3 cup mayonnaise

1 teaspoon lemon juice

1 teaspoon garlic

1 teaspoon sugar

½ teaspoon chili powder

½ teaspoon hot pepper sauce

1/2 teaspoon salt

Mix salad and dressing individually. Then pour dressing over salad. Serve with bread or bagel slices.

These recipes are a great way to make your occassion special. Party-goers will love them, but you can make them for the family or yourself. Hasta La Vista!
