Cinco De Mayo Recipes

Cinco de Mayo is one of my favorite days to cook for guests. I usually serve the three following dishes together. I make the pinwheels the day before, since they need to be refrigerated overnight before serving.

Mexican Pinwheels

8 oz sour cream

8 oz softened cream cheese

4 oz can of black olives

4 oz can green chilies

1 bunch chopped green onions

1 cup cheddar cheese

5 10-inch flour tortillas

Mix above ingredients (not the tortillas!). Spread mixture evenly on the tortillas. Roll into tubes. Chill overnight. Cut into bite size pieces and serve with salsa and guacamole.

Salsa

2 large ripe tomatoes, chopped

1 bunch green onions, chopped

1 small green chili pepper

1 handful of fresh cilantro

1 tablespoon lime juice

½ tablespoon sea salt

1 tablespoon sugar

Mix all ingredients and serve...delicious.

Guacamole
I always make Salsa and Guacamole at the same time. This way it is super easy to make the Guacamole. All I need is 1 ripe avocado and ¼ cup (more or less to taste) of the salsa. I mix these together in my food processor and add a little extra lime juice to keep the guacamole from turning brown as quickly as usual.
