Who Needs Chocolate when You Can Use Citrus?

BEVERAGES

The success of cold drinks is their iciness. Have your glasses and fruit chilled before hand to help drinks keep their iciness. Also, keep carbonated water and ginger ale on hand. They will enhance the citrus flavored drinks.

EVENING PUNCH

* 1-1/2 cups orange juice
* 1/2 cup lemon juice
* 2 cups sugar
* 1-1/2 cups hot tea
* 1 quart ginger ale
* 1 quart carbonated water

1. Stir sugar into hot tea until dissolved.
2. Add fruit juices and enough ice cubes to make punch the desired coldness.
3. When ready to serve, add chilled ginger ale and chilled carbonated water.
4. Thin slices of oranges, lemons and sliced strawberries enhance the look of the punch.

GRAPEFRUIT PUNCH

* 2 quarts water
* 2 cups sugar
* Juice of 2 lemons
* Juice of 2 large grapefruit
* 2 Tablespoons whole cloves
* A medium size bottle of Maraschino cherries

1. Bring the water, sugar and cloves to the boiling point, let steep then strain.
2. Add the fruit juices and juice from the bottle of Maraschino cherries.
3. Chill and serve in glasses with crushed ice and cherries.

RASPBERRY AND GRAPE ADE

* Juice of three oranges
* Grated zest of 1 orange
* 1 cup grape juice
* 1 cup sugar
* 2 quarts water
* 1 cup mashed raspberries

1. Mix well and serve in glasses one-third full of crushed ice, or ice cubes.
2. Garnish with half slices of lemons.

CITRUS FRUIT SYRUP

* 2 cups sugar
* 2 cups juice of any citrus fruits

Boil for five minutes. Cool, strain, bottle, seal and keep in the refrigerator.

FLOATING ISLAND

* Lemon fruit syrup
* Egg whites
* Cracked ice
* Sprigs of mint

1. Fill tall glasses one-fourth full of cracked ice (or broken ice cubes).
2. On top of ice place a sprig of mint and fill each glass almost full of lemon syrup that has been diluted to the consistency of lemonade.
3. Beat the needed number of egg whites stiffly, adding enough sugar to them to slightly sweeten.
4. Flavor the whites with a few drops of lemon juice.
5. Place a heaping teaspoon of egg white on the top of each glass of lemonade.
