3 cups Flour
2 tsp. Ground Ginger
1 tsp. Ground Cinnamon
1 tsp. Baking Soda
1/4 tsp. Ground Nutmeg
1/4 tsp. Salt
3/4 cup Butter, softened
3/4 cup Packed Brown Sugar
1/2 cup Molasses
1 Egg
1 tsp. Vanilla Extract

Preheat the oven to 350-degrees and position the racks in the center of the oven.

Mix Gingerbread Man Christmas Cookie Dry Ingredients
Mix together the flour, ginger, cinnamon, baking soda, nutmeg and salt in a large plastic or glass mixing bowl with an egg whisk.

Beat the brown sugar into the eggs in a separate bowl until they are light and fluffy. An electric mixer is best for this. When the sugar and egg are combined, use the electric mixer to blend in the molasses and vanilla. Gradually add in the flour mixture and blend until well mixed.

Roll out the dough on a lightly floured surface until it is approximately 1/4 of an inch thick. You can make the dough slightly thicker if you wish. This will cause the gingerbread man Christmas cookies to have a softer inside. Cut out the shapes with your choice of sizes of Gingerbread man cookie cutters.

Place the cookies on an ungreased baking sheet approximately 1-inch apart. Bake for 8-10 minutes or until you notice the edge of the cookies begin to brown. Be careful to avoid overcooking the Gingerbread man Christmas Cookies, as this will cause them to become too crunchy and difficult to chew.
