Recent studies and research have been done to clear the bad reputation for coconut oil, because of its high content in saturated fat. However, not all saturated fats are alike. Dr. Mary Inig, a biologist/nutritionist who is one of the world research leaders in oils and fats, identified the key ingredient in coconut oil as lauric acids.

What is lauric acid?

Yes, coconut oil contains high saturated fats, about 92%, but in this there are also 62% of saturated medium chain triglycerides. According to Dr. Mary Inig, 50 percent of fatty acids in coconut fat are lauric acid, the medium chain fatty acids, which offer beneficial function in forming monolaurin.

Human or animal uses monolaurin to help with anti-viral, antibacterial, and anti-protozoal monoglycemonoglyceride to fight viruses. Such viruses are HIV, herpes, influenza, and various bacteria.

Mother's milk is the only other source that contains a high lauricof lauric acids beside coconut oil.
