Ingredients:
1 lb of shrimp (already cooked - can be fresh or frozen)
1/2 cup of shredded coconut
1 can of coconut milk
2 tablespoons of minced garlic
1/3 cup of maraschino cherries cut in halves (substitute grape tomatoes for something a little less sweet)
1/4 cup of French vanilla coffee creamer by International Delights
Preparing the dish:
1. In a saute pan, saute minced garlic for 2 minutes over medium heat.
2. Pour can of coconut milk into the pan and heat for 2 minutes.
3. Add shrimp and saute for 10 minutes.
4. Reduce heat to low and add cherries and shredded coconut for 3-5 minutes to warm them up.
Serve over white rice with crusty bread and a salad. Delicious!
Please note that this dish is very sweet because of the French vanilla creamer. Cut back the amount or exclude it if you really don't like sweet dishes. In my opinion, though, it's what makes the dish!

Post a CommentThis recipe is pretty good, I modified it a little bit... First, I cut back on the creamer some... only used about 1/8 C of the creamer and left the cherries/tomatoes out all together. I also added about 1/2 tsp salt and approximately the same amount of a combination of black/red peppers. I also used some diced red pepper for heat, making sure to remove the seeds to avoid the texture they provide. I also cut the rice out and served the dish over a bed of Chinese rice noodles. Served with warm sake, MMMMM!
