Colorado's Buttered Rum Muffins

Pat Burroughs
Is rum a Colorado product, or why was this muffin chosen as the state muffin? I'm not sure, but here's the recipe. Start with the Rich 'N' Sweet Muffin recipe found on the basic muffin recipe article found here:

Colorado Hot Buttered Rum Muffins

1 recipe Rich 'n' Sweet Muffins

1/8 teaspoon ground cloves

5 Tablespoons rum, divided

3 Tablespoons sugar

Prepare muffin recipe as directed except add cloves to dry ingredients and 3 tablespoons rum to milk. Use butter rather than margarine. While muffins are baking, combine sugar and remaining rum in small saucepan; heat gently until sugar dissolves. Brush over tops of hot muffins. Makes 1 dozen, about 220 calories each.
