This enchilada casserole is one of my family's favorite comfort food recipes. It is a great way to serve ground turkey. You can make it with ground beef, but I like the fact that turkey is much lower in fat. It's easy, cheap, filling and everyone loves it!
Enchilada Pie Recipe
1 lb. ground turkey
3/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chili pepper
1 can tomato sauce (8 ounce)
6 corn tortillas
2 cups shredded cheese, cheddar, monterey jack or a combination
2/3 cup water
Brown ground turkey with the onion. Add spices and tomato sauce. In a round 2 quart casserole, layer tortillas, meat mixture, and cheese. Pour water at the edge of casserole to the bottom. Cover and bake at 400 degrees for 30 minutes. Cool a bit, then cut into wedges. Serves 4 - 6.
I usually add some re-fried beans and a salad to this meal.
