Italian Tomato Sauce, Enchilada Pie, Crock Pot Pork Adobo

Comfort foods are the dishes our families love, especially on a cold winter day. These three recipes are some of my favorites. The Italian tomato sauce will make enough for two meals. I try to make this each week since it is so versatile.

Italian Tomato Sauce Recipe

1 - 28oz can tomato puree
1 - 28oz can crushed tomatoes or diced if you like it chunky
1 - 6oz can tomato paste
1/2 of the 28 oz can filled with water
1/4 cup chopped onion
5 garlic cloves, crushed or chopped
1/2 cup red wine (optional)
1 tsp dried oregano
1 tsp dried basil (or a small handful of fresh)
1/2 tsp salt
1 tbsp olive oil
Saute onion in large sauce pan with the olive oil. Add garlic when the onions start to look translucent. Cook for about a minute. Then stir in wine and bring to boil. Add the 2 cans of tomatoes and the paste. With one of the empty cans, fill halfway with water and stir into sauce mixture, mixing well. Add the oregano, salt and basil if using dried basil.
Bring to a slow boil. Lower heat and simmer for at least 30 minutes.
If using fresh basil, add it after about 20 minutes for a nice basil-y flavor!
You can add cooked meatballs or sausage to the sauce while it's cooking for a great meat sauce taste.
This sauce is perfect for spaghetti, lasagna, pizza or any Italian baked casserole.

Enchilada Pie Recipe

1 lb. ground turkey
3/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chili pepper
1 can tomato sauce (8 ounce)
6 corn tortillas
2 cups shredded cheese, cheddar, Monterey jack or a mixture of cheeses
2/3 cup water
Brown ground turkey with the onion. Add spices and tomato sauce. In a round 2 quart casserole, layer tortillas, meat mixture, and cheese. Pour water at the edge of casserole to the bottom. Cover and bake at 400 degrees for 30 minutes. Cool a bit, then cut into wedges. Serves 4 - 6.
I usually add some re-fried beans and a salad to this meal.

Crock Pot Pork Adobo

Pork roast or country style pork ribs 2-3 lbs.
10 garlic cloves
1/2 cup soy sauce
3/4 cup white vinegar
1 carrot cut in chunks
1 small onion cut in chunks
1/2 tablespoon ground peppercorns
2 bay leaves
1/2 cup water
Simply add all ingredients to the crock pot & cook all day on medium high. For the last hour, remove lid and shred the meat with a fork. Continue to simmer with the lid off. This dish can also be made using chicken, instead of pork.
Serve with cooked rice. Serves 4 to 6.
