Yummy cookies
8 ounces yogurt
3 tablespoons cocoa
1/2 teaspoon baking powder
1 tablespoon buckwheat flour
2 tablespoons melted butter
1 cup molasses
2 cups flour
1/4 teaspoon baking powder
dash salt
4 ounces washed cranberries
Just mix all these ingredients together, and spoon onto a greased baking sheet, place into a preheated oven, bake at 350 F for 10 - 12 minutes.
Serve with your favorite cold beverage.
Crunchy Yummy Cookies
2 cups corn meal
1 cup unsweetened or sweetened coconut flakes
2 mashed bananas
1 cup plain or pina colada yogurt
1/4 cup crunchy peanut butter
1 tablespoon splenda or brown sugar or demerara sugar
1 cup flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup melted butter, or safflower oil
1 cup coconut flakes for rolling cookies
Mix the above ingredients together. Roll cookies into coconut flakes, then drop onto ungreased baking pan. Bake at 300 F for 12 - 15 minutes.
Easy Cookie Mix Baking
The Arrowhead Mills organic sugar cookie mix turned out to be tasty, indeed. I added extra vanilla flavor, vanilla extract, and topped off some of the cookies with cinnamon sugar. Substituting 1 tbl yoghurt for 1 tbl of butter, using 7 tbl of butter worked, the yoghurt offset the vanilla. They tasted best fresh out of the oven. These cookies might be best when served at a family gathering, although, they should stay tasty and crisp for weeks, when placed in a sealed cookie jar. The star-shaped cookie cutter in the box was a fantastic tool, and making cute little gingerbread boys was fun, too.
Baking with Bisquick baking mix
Cookies using a pancake mix, you might be asking, however, there are variations to a theme that are tasty enough for breakfast or brunch on the run. If you prepare the mix so that it is a bit thicker than that used for pancakes, and make the cookies to be about the size of silver dollar pancakes, and add minced fresh fruit, chopped nuts, or even some chocolate chips - these cookies are perfectly acceptable, whether pan-sauteed, or baked at 325 F for 10 minutes.
Using shredded cheese and minced broccoli is another variation that makes for a nutritious and convenient lunch time snack. So does the spinach and cheese variation, or the diced canned tomatoes and cheese variation of the mini-pancakes or baking mix cookies.
I liked Bisquick as the baking mix contains only 1 gram of dextrose per serving, although, the "heart healthy" variety contains additional 3 grams of sucrose. Some people do not like sucrose at all, others are aversive to too much sucrose, a few cannot have sucrose.
