For this recipe, you would need the following items:
1 package of cubed tofu
Catalina salad dressing
Light Three Cheese Ranch salad dressing
1 can of light red kidney beans
broccoli (as much as you would like)
1 package of jumbo shells
1 Bruchetta Boca Burger
1 Beef boulion cube
1/2 sweet onion
Shredded cheddar cheese
In a bowl, mix together one tablespoon of Three Cheese Ranch dressing with one teaspoon of Catalina salad dressing. Blend the two dressings until you achieve a nice pink color. Open up the package of tofu, making sure you drain all of the water first. Pour the cubed tofu into the mixture and make sure that each piece is coated. Let it sit for about one hour in the mixture.
When you are ready, cut a sweet onion in half and dice it. Sautee the onion in a medium pan for a few minutes. Pour the tofu mixture into the pan and make sure it is spread evenly. After three minutes, pour in the can of kidney beans and make sure that everything is blended evenly. After another three minutes, lower the temperature to medium low and cover the pan.
Next boil water in a 4 quart pot and in a small pot. The small pot will need one cup of water. Into the four quart pot you will be cooking the jumbo shells (following the directions on the package) and in the small bowl you will be using the beef boulion cube. Once the cube has been dissolved, pour the liquid in to the pan , covering the top of your food. Cover the pan again. Prepare cooking broccoli.
While waiting for the jumbo shells to cook, prepare the Bruchetta Boca Burger, following the directions on the box. Using the oven or microwave does not matter. I have used both ways for cooking the burger before. Check on the shells, waiting until they are soft. Drain shells and pour them into a bowl. Pour the tofu and beans mixture into the bowl next. Once the broccoli is done, add it to the bowl as well. Finally cut up the Boca Burger into small pieces and add to the bowl. Toss everything together in the bowl until everything is well mixed. Put as much shredded cheese as you would like on top, letting it melt from the heat. Serve hot.
