Corn and Avocado Salsa Recipe

Serves:

2-4 people as a side dish.

Ingredients:

1/8 cup of taco seasoning (1/2 packet)

1 - 1/4 cups of corn (Any variety works, frozen or fresh is best, but canned is fine)

1 red bell pepper

1/2 large onion

1 clove garlic

1 large ripe avocado

1 tbsp lime juice

1 tsp honey

1/2 cup tomatos (optional)

Preparation:

Chop avocado, red bell pepper, and tomato to bite sized pieces, dice onion and garlic.

Sautee onions and garlic until they soften, about 5 minutes. If you use frozen corn, add to pan and heat until defrosted.

Let onions and garlic cool for a few minutes.

Combine all ingredients in a bowl and serve.
