Corn Bread Recipe: Light and Slightly Sweet

This corn bread is light, slightly sweet and has a smooth texture. It is easy to prepare. Corn bread is great with chili, stew, or bread at your meal. It is wonderful sliced and toasted for breakfast. Or it can be eaten in a bowl with milk.

Corn Bread

Ingredients:

2/3 cup flour

1 ½ cup yellow cornmeal

3 teaspoons baking powder

1 tablespoons sugar

1 teaspoon salt

1 egg

1 egg white

1 1/3 cup milk

¼ cup oil

Combine flour, cornmeal, baking powder, sugar and salt in mixing bowl. Mix dry ingredients lightly with a fork. In a measuring cup, combine the egg, egg white, milk and oil and mix well. Add the mixture from the measuring cup to the dry ingredients in the mixing bowl and combine just until smooth and blended. Pour the batter into a 9X11 inch greased baking pan. Bake at 400 degrees for 20 - 25 minutes, until a toothpick inserted into the middle of the cornbread is clean when removed.
