Country Green Beans with Bacon

Country style green beans that are packed full of flavor. This is one of our family favorites and compliments almost any main dish.

Ingredients

Serves 4
1 Large yellow onion
2 lbs Fresh green beans or 3 cans canned green beans
1/2 lb Smoked bacon or ham
Salt to taste
Pepper to taste
1/2 Cup Chicken stock

Directions for Country Green Beans with Bacon

Saute the Bacon and Onion
Cut the bacon or ham into small bite size pieces and then add them into the bottom of a medium sized pot. Cook on medium high heat. Once the bacon has started too cook and you have some fat in the pan, add the diced onion. Stir and cook until the bacon is cooked and onions are translucent. Do not drain the grease.

Cooking the Beans
Add the chicken stock to the same pot as the bacon and onion. Scrape the bottom of the pan to remove the crisp parts left on the bottom of the pan. Turn down the heat to simmer and add green beans, salt and pepper. Cover the pot and simmer over low/medium heat for 2 hours. 3 hours for fresh green beans.
Tip
Fresh green beans will need to cook longer than canned green beans. When using canned green beans use the liquid in the cans. If the liquid cooks off add more chicken stock or water.
