Crab or Shrimp Stuffed Cajun Mushrooms Recipe
Cajun Stuffed Mushrooms, for the Seafood and Mushroom Lover
12 large, fresh mushrooms
1 cups bread crumbs (I like the Japanese Panko)
1 chopped fine medium onions
1/4 Lb. butter for sauting
1 tablespoons Worchestershire sauce
1 medium chopped well bell peppers
1 tablespoons Tabasco or Cajun hot sauce
1 chopped up celery rib
salt and pepper to taste
1/4 Lb. butter
Some red pepper
1 Lb crab meat or chopped shrimp
1/3/ cup lemon juice
1/3 cup chopped green onions
1/3 cup chopped parsley
Cut stems off the mushrooms, clean up he caps.
The dressing: Next sauté onions, peppers and celery in 1/4 pound of butter until they soften then add the crab or shrimp, some of the lemon juice and simmer on low for about 10 minutes. Add a little of the green onions and parsley, all the bread crumbs, and some of the Worchestershire and Tabasco. Keep cooking on low for 4 or 5 minutes more while you stir and season to your own taste with salt and pepper. Now let it cool.
Stuff the dressing into the mushroom caps and place them on a cooking sheet. Melt the rest of the 1/4 pound butter and add the rest of lemon juice, Worchestershire and Tabasco. Continue cooking on low foe a minute or so the pour over the mushrooms. Bake at 350 for about 15 minutes.
