Craig's State Fair Salsa Recipe

A Delicious, Fresh Salsa, Perfect for Football Games, Mexican Dishes, or Simple Snacking

This is my own salsa recipe that I made up after tasting a sample salsa at at demo table at the Ohio State Fair. Increase tomatoes for less spice, reduce garlic and onions for better breath, or add any spicy peppers you want. This is simply a great place to start: delicious on its own and easy to adapt to your needs.

Ingredients:
5-6 roma tomatoes
1 green or red bell pepper
2-3 cloves of garlic
1 yellow or white onion
salt
pepper
handful of fresh cilantro (to taste)
(add other, hotter peppers to taste)

Instructions:

Cut tomatoes down to quarters and place in food processor
Cut pepper into slices and place in food processor
Peel and quarter garlic cloves and place in food processor
Lightly chop onion and place in food processor (start with half an onion and increase to taste)
Chop cilantro and place in food processor

Process ingredients in food processor for 30 seconds or until tomato and pepper chunks are small. Add about 1/2 teaspoon of salt and 1/2 teaspoon of pepper (to taste) and add onion, tomato, or cilantro as needed.

Final texture should be uniform sizes - not too chunky. Store it in tupperware and sever with tortilla chips. Your breath will stink, but it is fantastic.
