Creative Ways to Use Your Summer Squash

Summer is a great time for cooking. There is nothing that I love better than using fresh vegetables in my recipes. Each year squash seems to be the most abundant in the garden. It can become difficult to find a variety of ways to use them. I hate to let them waste and we usually eat them every day. Therefore, I have to find different recipes to keep flavor and excitement in the meals.

In this article, I will share some of my squash recipes with you in order to hopefully help you create excitement and flavor with your squash.

Traditional Squash Casserole

Ingredients

4 cups of cooked squash
1 onion
2 eggs beaten
1 stick of butter
1 cup of cheese
1 cup of cracker crumbs (save ¼ cup for topping)
1 cup of mayonnaise
2 Tbs sugar

Chop squash into small pieces. Chop onion into fine pieces. Melt stick of butter. Mix squash, onion, eggs, butter, cheese, mayonnaise, and ¾ cup of cracker crumbs. Pour into a casserole dish. Top with remaining cracker crumbs. Bake at 350 until mixture is no longer runny and crackers have browned.

Grilled Squash

Ingredients

Squash
Green Pepper
Red Pepper
Yellow Pepper
Zucchini Squash
Broccoli
Steak marinade
Seasoning salt
Butter

Cut squash, zucchini, broccoli, and peppers. Place in a foil bag. Top with steak marinade and seasoning salt, add butter. Place on grill and grill until veggies are tender.

Squash Fitters

Ingredients

Squash
Cheese
Egg
½ cup self rising cornmeal
2/3 cup milk
1 egg
oil
shredded cheese

Grate squash using a cheese grater. Beat egg. Mix all ingredients together except for the oil. Heat oil in pan. Drop a spoon full of batter mixture into heated oil. Cook until brown.

Squash Casserole in Shell

Ingredients

Small to medium size squash
Shredded cheese
Egg
Green pepper
Cracker crumbs

Stem whole squash. Cut squash in half lengthwise. Dip out inside of squash and save. Chop green pepper. Beat egg. Mix inside of squash, green pepper, cheese, and egg. Spoon the mixture back into squash shells. Top with cracker crumbs. Back until top is brown. The entire dish is edible!

Fried Squash

Ingredients

Cornmeal
Flour
Squash
Oil

Slice squash into thin pieces. Create a cornmeal and flour mixture. Heat oil in skillet. Place the cornmeal and flour mixture into a Ziploc bag. Wash squash and leave wet. Place squash into the bag and shake. Place the coated squash slices into the heat oil and brown on both sides.

Escalloped Squash

Ingredients

½ gal. Sliced squash
2 boiled eggs
2 tbsp chopped onion
½ tsp sugar
salt to taste
2 Tbsp butter
2 Tbsp flour
1 cup milk
cheese

Boil squash, onion, and salt until tender. Drain. Put in buttered casserole dish. Dot with butter. Sprinkle with sugar. Create a white sauce with flour, butter, and milk. Cook until thickened and pour over squash. Cover with cheese. Bake 20 minutes on 350. Top with eggs.

Yellow Squash Puffs

Ingredients

¾ pounds sliced squash
1 egg beaten
1/3 cup al purpose flour
1/3 cup cornmeal
1 tsp baking powder
½ tsp slat
1 onion grated
vegetable oil

Cook squash until tender. Drain. Mash to measure 1 cup. Combine squash and egg. Combine flour, meal, baking powder, and salt. Add squash mixture and onion. Drop into hot oil.
