Louise received culinary training at The Cooking and Hospitality Institute of Chicago (Le Cordon Bleu). She received diplomas with top honors in professional cooking, baking and pastry. She went on to work as a sous chef and a pastry chef in Chicago. Louise and her husband moved to Ashland in May of this year and by June, she started Creekhouse Patisserie.
Louise is selective when it comes to quality. She is steadfast in her commitment to using only the very finest ingredients with no preservatives. "I use the finest ingredients to obtain the very best flavor and texture," she says. "I make everything from simple drop cookies to petit fours, all with that same standard of quality. And the flavors jump out at you," she says.
In her spare time, Louise teaches classes at Allyson's of Ashland. In February, she will be covering a few classes on Valentine's Day desserts including Bread Making and the Art and Science of Chocolate.
Creekhouse handles retail or wholesale orders in her licensed kitchen. You can find some of her products at Allyson's of Ashland, truffles at Market of Choice and pastries at Shop N Kart. One of the benefits of buying Creekhouse desserts is that Louise offers local delivery. She can deliver to your home or business, or arrange to meet downtown if that is more convenient for you. Imagine not even having to venture out in the cold to get a dessert for that upcoming holiday party-- just a quick phone call and Louise handles everything from there. What a holiday time saver. If you are short on time, give her a call. "Don't be afraid to order something on short notice," she says. "I often have boxed chocolates on hand for gifts as well."
