You will need-
2 large onions (preferably yellow)
flour
vegetable oil
one packet of powdered ranch dressing mix
milk
baking power
salt
Cut the onions across the grain of the onion to create rings. Separate them. In a bowl add 1 1/2 cups of flour and a teaspoon of baking powder, and half of the contents of the ranch mix. Add milk and mix until it is the consistency of pancake batter. Do not be concerned with lumps in the mixture. They make the rings crispier. Take a flat plate and fill it with flour. Put the remaining ranch mix on top and mix thoroughly.
Take each individual onion ring and dip into the liquid mixture. Then into the dry flour mix. Set on a plate until ready too cook.
Take a pot and fill it half way with vegetable oil. Heat at "medium high". Wait 5 minutes for oil to heat thoroughly. Drop the rings in. Lift them out when they are still a lighter tan color. They are better if not over cooked. After cooking, place on a plate with paper towels to blot the extra oil. Add salt to taste.
I usually use Ranch dressing to dip the finished rings in. If you want an added zip, but a dab of horseradish in the ranch dressing and mix. Enjoy!
